Pulled Pork Sliders

Ingredients
24 slider buns
4 cups cabbage, shredded
1 cup carrots, shredded
1/2 cup mayonnaise
2 tsp apple cider vinegar
1/4 tsp salt
1/4 tsp black pepper
Method
Step 1
Defrost and heat pork according to pack instructions.
Step 2
While the meat is cooking, prepare the coleslaw and buns. Slice the slider buns in half and lightly toast them if desired.
Step 3
To make the coleslaw, in a large bowl combine the shredded cabbage and carrot. In a separate small bowl whisk together the mayonnaise, apple cider vinegar, salt and black pepper. Pour the dressing over the cabbage and carrots and toss until evenly coated. Allow to rest for flavours to combine.
Step 4
To assemble, place a generous amount of pulled pork (40g) on the bottom of each slider bun. Top the pulled pork with a spoonful of the coleslaw (20g). Place the top of the bun on the coleslaw to complete the slider.
Chef’s tip:
Garnish sliders with coriander and serve with pickles on the side for a tangy complimentary crunch.
