Pulled Pork Stuffed Potatoes

Ingredients

1kg Standard Meat Company Sweet Hickory BBQ Pulled Pork
8 small potatoes, sliced lengthways
olive oil
salt
2 tbsp butter, melted
1 cup cheddar cheese, shredded
1/4 cup BBQ sauce
1/3 cup sour cream
3 spring onions, sliced

Method

Step 1

Defrost and heat pork according to pack instructions.

Step 2

Preheat oven to 200°C. Coat potatoes in olive and place cut-side down on baking sheet and sprinkle generously with salt. Bake for 25-30 minutes or until cooked through.

Step 3

Scoop out most of the cooked potato so you are left with a shell. Increase oven temperature to 220°C. Place potato shells on baking sheet, brush with melted butter, sprinkle with salt and bake for an additional 8-10 minutes to crisp.

Step 4

Remove potato shells from the oven, add approx. 50 g pulled pork to each potato shell and sprinkle with cheese. Return to the oven for 5 minutes or until cheese is melted.

Step 5

Drizzle with BBQ sauce, add a dollop of sour cream and sprinkle with green onions.

Chef’s tip:

Serving with BBQ ribs and smoked meat completes the American BBQ experience.
