Char Siu Pork Miso Ramen

Ingredients

Char Siu Pork, heated and sliced
350 g ramen noodles
20 g canola oil
2 litre dashi stock
2 tablespoons bonito flakes
1 tablespoon red miso
1/4 cup thinly sliced spring onions
1/4 cup enoki mushrooms, trimmed, a few reserved
1 small bunch baby bok choy, trimmed and sliced into strips
1 large egg
1 teaspoon baking soda
1 pinch togarashi
1 pinch furikake

Method

Step 1

Heat a fry pan over high heat add oil and heat for 20 seconds, reduce to medium heat add bok choy and mushrooms. Sauté until just wilted (1 minute), remove from heat, set aside.

Step 2

Bring a pot of salted water to boil, add baking soda and turn down to a gentle simmer, add egg and cook for six minutes.

Step 3

Remove egg with a slotted spoon and cool, then peel and slice in half, set aside.

Step 4

In a large pot, combine stock, any Epic Eats pork sauce from the pack, miso and bonito, bring to a gentle boil.

Step 5

Add noodles and cook until just tender, remove from heat.

Step 6

Place bok choy, enoki and noodles in each serving bowl.
