Mexican Pulled Pork Nachos

Ingredients
1 Epic Eats Mexican Pulled Pork
1 large packet tortilla chips
1 red onion, thinly sliced
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack or mozzarella cheese
2 diced tomatoes
1 tub sour cream
1 jar salsa
Guacamole
½ bunch fresh coriander, chopped
2 limes, cut into wedges
Method
Step 1
Preheat oven to 200˚C conventional, 180˚C fanforced.
Step 2
Using a cast-iron pan or other oven-safe dish, assemble the nachos layer by layer. Start with tortilla chips, followed by pork, onion, tomato, salsa, and cheeses. Repeat as desired for additional layers.
Step 3
Heat wok over medium heat, add a tablespoon of oil, add the onions cook until translucent and then stir in the pork. Add the rice and mix well. If the rice is cold from the refrigerator, continue stir-frying until the rice is warmed up, which will take about 5 minutes. If the rice was made fresh, then you just need to mix until everything is incorporated.
Step 4
Bake for 8-10 minutes until cheese is melted and bubbling.
Step 5
Top with sour cream, guacamole, limes and coriander.
