Mexican Pulled Pork Tacos with Guacamole

Ingredients
12 mini tortillas
2 limes, cut into wedges
1 large ripe avocado, smashed
Salt to flavour
1 small gem or cos lettuce, shredded
3 large ripe tomatoes, diced
2 tsp olive oil
Small handful fresh coriander, finely chopped
½ cup grated cheese
Method
Step 1
Heat Mexican Pulled Pork according to preferred cooking method.
Step 2
Heat tortillas as suggested pack instructions.
Step 3
To make the simple guacamole, place the avocado in a bowl and add the lime juice, salt. Mash with a fork to the desired consistency. It can be as chunky or smooth as you like.
Step 4
Serve the Mexican Pulled Pork tableside with warmed tortillas, lettuce, tomatoes, guacamole and cheese. Coriander and lime wedges for an extra hit of freshness.
