Quick Southern Style Black Eyed Beans

Ingredients
Honey BBQ Ribs, heated as per preferred pack instructions
450g black eyed beans, drained
4 slices bacon, diced
1 onion, diced
6 garlic cloves minced
1 Ham Hock
1 tsp dried thyme
1/4 tsp pepper
2 bay leaves
6 cups chicken stock
Method
Step 1
Rinse beans under cold water.
Step 2
In a medium saucepan with a lid, place on medium heat, add bacon and cook until crisp, then add onions, cook until translucent.
Step 3
Add garlic and sauté for an additional minute.
Step 4
Add remaining ingredients except beans. Place a lid on the pot and cook for 40-50 minutes.
Step 5
Carefully remove the lid; remove ham hock and bay leaves. If desired, remove meat from the bones; chop the meat and return to pan add the beans.
Step 6
Cook for a further 5 minutes, season to taste with salt and pepper. Serve with Honey BBQ Ribs.
