Ingredients
Standard Meat Company Gyros Kit including pita
120 g baby spinach
50 g red onion, sliced 5mm
100 g cherry tomatoes, halved
100 g cucumber, large dice
50 g kalamata olives, pitted
100g Greek feta
2 g dried oregano
40 ml extra virgin olive oil
30 ml lemon juice
salt
pepper
Method
Step 1
Heat lamb and pita according to pack instructions.
Step 2
In a small bowl whisk together olive oil, lemon juice, oregano, salt and pepper.
Step 3
In a large mixing bowl toss together spinach, onion and olives.
Step 4
Pour in dressing and toss salad to evenly coat.
Step 5
Mix in lamb while hot when ready to serve.
Step 6
Serve immediately topped with crumbled feta cheese.
Chef’s tip:
Add a squeeze of lemon juice to enhance the flavour of the lamb and herbs.
