Char Siu Pork Fried Rice

Ingredients
5 cups cooked jasmine rice
2 eggs, scrambled
1 tablespoon oil
1 medium onion, diced
Char Siu Pork, diced
1 tablespoon hot water
1 teaspoon honey
1 teaspoon sesame oil
1 teaspoon Shaoxing wine (or dry cooking sherry)
1 tablespoon soy sauce
1 teaspoon dark soy sauce
1/4 teaspoon white pepper
1 teaspoon salt
1/2 cup bean sprouts
2 spring onions, chopped
Method
Step 1
Combine the hot water, honey, sesame oil, Shaoxing wine (if using), soy sauce, dark soy sauce, and white pepper in a small bowl. Set aside.
Step 2
Fluff the cooked rice with a fork or with your hands, there should not be any clumps.
Step 3
Heat wok over medium heat, add a tablespoon of oil, cook the onions until translucent and then stir in the pork. Add the rice and mix well. If the rice is cold from the refrigerator, continue stir-frying until the rice is warm, approx. 5 minutes. If the rice is fresh and warm, mix until ingredients are incorporated.
Step 4
Add the sauce mixture and salt, combine with a scooping motion until the rice is evenly coated with sauce. You may have to break up any remaining clumps of rice with a spatula.
Step 5
Toss in your bean sprouts, scrambled eggs, and spring onions. Mix thoroughly for 1-2 minutes and then serve!
